Introduction / The making of Mostocotto has different phases. The grapes are pressed with crushers. The free-run must is filtered, cleaned from the skins and grape pips and cooked.
At the boiling stage, the must is allowed to thicken over a slow heat for about 8 hours, until the quantity reaches about a quarter of the initial must. The preparation of Mostocotto is rooted in the centennial rural culture of Abruzzo. Mostocotto is an ingredient used in the preparation of many traditional local sweets and pastry.
Mostocotto can be perfectly used for dressing salads and fruit salads or in combination with aged cheeses and grilled meat.
